Baked King Prawn with Sweet potato and Rucola Salad

Ingredients :

  • 8 King Prawn
  • 1,5 Lemon
  • 2 Tbsp flour
  • 2 Tbsp butter
  • 0,5 tsp nutmeg
  • 500 ml milk
  • 150 gr Middle Gouda cheese
  • 150 gr Old Gouda cheese
  • 0,5 tsb paprika powder
  • 100 gr parsley
  • 2 sweet potato
  • 300 gr cherry tomato
  • 1 bag Rucola
  • Olive oil
  • Vinegar
  • Salt
  • Pepper

Slice all sweet potato,place them in baking dish coated with olive oil. Sprinkle with salt and pepper to adjust. Put them in oven for 30-45 minute. Check them once a while to make sure all side evenly baked.

Meanwhile prepared the king prawns. Take out the head, then gentle slide remain of the prawns to make the sauce absorb easier. Put aside. 

Prepare the sauce, put the butter in a hot pan, add nutmeg, flour and keep stirring. At the same time pour the hot milk slowly while stirring the pan. Leave for 5 minutes then add all the cheese, stirring again. Add salt and pepper to adjust.

Prepare the prawn on baking dish, pour all the sauce on top of them, make sure its even. Then add the paprika powder and parsley. Put in oven for 10 minutes.

Now prepare the salad. Just toss the Rucola, cherry tomato, olive oli, vinegar and bit of salt and pepper. Ready to garnish the plate with salad in the centre, sweet potato on the side and the baked king prawn on top. Don't forget to squeeze the lemon to give extra freshness. Bon A petite!
